How to make a quick and easy cake mix waffle for 1.
It’s Waffle of the Month time!
Last month’s waffle of the month was Strawberry Honey Waffle for 1. This month, I wanted to go with something easy and fun that you can do with a box of cake mix you might already have in your pantry. This is a great option when you don’t have waffle mix, or when you want to get some fun flavors without needing all the extra ingredients.
I like the plain jane french vanilla flavored cake mix, but I do make cake mix cookies quite a bit (like these Chocolate Mint Cookies), and always have leftover flavors that become waffles sometimes. You may think it’d be really sweet and cakey, but I think it is the perfect amount of sweetness and consistency. I will say though, it doesn’t come out as crisp.
I will also add that I prefer to make my waffles one at a time, mainly because with doing for two, the amounts are never even, and usually one of the waffles doesn’t have enough mix, but you can absolutely mix up for two or more waffles at once – it’s one egg per two waffles.
If you like a little something extra in your waffle, you can mix in 2 tablespoons of chocolate chips or nuts, and/or 1 teaspoon of vanilla extract.

Makes:
1 Waffle
Time Required:
15 Minutes
- Mix Waffle Ingredients (5 Minutes)
- Rest Waffle Mix (5 Minutes)
- Cook Waffle (3 Minutes)
Waffle Ingredients – Makes 1:
- 0.5 Cup of Cake Mix – I love to use Duncan Hines French Vanilla flavor
- 1 Egg
- 5 Tbsp of Water
- 1 Tbsp of Melted Butter
You’ll Also Need:
- Mixing Bowl
- Spoon/Spatula for Mixing Ingredients
- Measuring Cup and Spoons
- Pam, or Butter and Flour for Cooking
- Waffle Maker
Ingredient Notes:
- EGG: If you make more than 1 waffle, use 1 egg per 2 waffles.
- SUGGESTED ADD-INS: 2 tablespoons of chocolate chips or nuts and/or 1 teaspoon of vanilla extract.
Recipe:
Step 1: Mix the wet ingredients together (including any extracts).
Step 2: Add in the cake mix, and stir until combined and no longer lumpy.
Step 3: If you want to add any chocolate chips or nuts, add in now.
Step 4: Let batter rest for about 5 minutes.
Step 5: Plug in waffle maker, spray with Pam, and when ready, cook waffle for about 3 minutes.

I wonder if this would work with a gluten free cake mix?

I am so sorry! I thought I responded to this comment right after I saw the notification in my email. I have never tried anything gluten free, so I have nothing to compare it to, but I would like to think so. I would imagine the cake recipe is pretty close to a boxed mix that contains gluten requiring oil, eggs and water?
