Strawberry Honey Waffle for 1

How to make a refreshing strawberry waffle for 1.

It’s Waffle of the Month time!

Last month’s waffle of the month was Mint Chocolate Chip Waffle Sandwich. This month, I wanted to go with something light and refreshing using my favorite fruit – strawberries!

The hand towel is my Volume One Hand Towel, and I have a free crochet pattern on my sister blog, EyeLoveKnots, if you’re interested.

I experimented with this recipe a bit.

First I tried 1/4 cup of strawberries, 6 tablespoons of milk and 1/2 cup of waffle mix (with all the other ingredients mentioned as is). This quantity of milk and waffle mix is what I normally use when I make my waffles, but the strawberries add more moisture so the finished waffle wasn’t as crisp. Also, the strawberry flavor was subtle, and I wanted to really taste them. AND, it made more mix than I needed.

I modified that recipe in attempt to add more strawberry flavor, and take away some of the moisture and quantity of mixture. This modification included using 1/2 cup of strawberries, 5 tablespoons of milk and 1/3 cup of waffle mix (with all the other ingredients mentioned as is. This one was a winner! The strawberry flavor was just what I wanted, the waffle came out crisper though a little darker in color, and it made less mixture though still a bit more than I needed, but I’m happy with this light, delicious waffle!

If you like a little something extra in your waffle, you can mix in 2 tablespoons of chocolate chips, and/or 1 teaspoon of vanilla extract.

Recipe Lion, Cheap Thrifty Living

Makes:

1 Waffle

Time Required:

15 Minutes

  • Mix Waffle Ingredients (5 Minutes)
  • Rest Waffle Mix (5 Minutes)
  • Cook Waffle (3 Minutes)

Waffle Ingredients – Makes 1:

  • 1/3 – 1/2 Cup of Waffle Mix – I like Aunt Jemima
  • 1/2 Tbsp Butter or Oil – I use Country Crock’s Plant Butter
  • 5 Tbsp of Milk – I use lactose free 2%
  • 1 Egg
  • 1/4 – 1/2 Cup of Strawberries – that’s 4 – 6
  • 2 Tsp of Honey – I use Clover Honey

You’ll Also Need:

  • Mixing Bowl
  • Spoon/Spatula for Mixing Ingredients
  • Measuring Cup and Spoons
  • Blender
  • Pam, or Butter and Flour for Cooking
  • Waffle Maker

Ingredient Notes:

  • WAFFLE MIX: I sometimes use Hungry Jack, but I think Aunt Jemima makes a fluffier waffle.
  • EGG: If you make more than 1 waffle, use 1 egg per 2 waffles.
  • SUGGESTED ADD-INS: 2 tablespoons of chocolate chips and/or 1 teaspoon of vanilla extract.
  • BLENDER: I wanted the strawberry flavor infused rather than sliced and mixed in so I blended them. You can also mash them instead.

Recipe:

Step 1: Add the waffle mix to a mixing bowl, and set aside.

Step 2: Blend the wet ingredients together – that’s the strawberries, honey, egg, butter and milk. If you choose to add in vanilla extract, do so now.

Step 3: Pour the wet mixture into the mixing bowl with the waffle mix, and stir until combined until it’s no longer lumpy.

Step 4: If you choose to add in chocolate chips, mix in now.

Step 5: Let batter rest for about 5 minutes.

Step 6: Plug in waffle maker, spray with Pam, and when ready, cook waffle for about 3 minutes.

      Get one! Definitely! I still do store bought frozen waffles when I’m in a rush or feeling lazy, but nothing beats a homemade waffle.

When I received this black Ouges brand top in my September Amazon Wardrobe box, I was pretty happy. I have a similar top that I received in an earlier box that is the same brand, and I love the fit of it. I think the raglan style gives me a sort of confidence. It's lip balm season, and these lip balm holders are excellent! They come on a swivel hook that can be attached anywhere for easy access, and to make sure you don't lost your lip balm at the bottom of your bag. I personally have one of these. The quality is great, and Candace is lovely to work with! PLUS they come in 11 colors!
