Mushroom Chicken Pasta Skillet

How to make a quick and easy chicken pasta skillet with cream of mushroom soup.

When you have leftover half and half, and a can of cream of mushroom soup, you make a pasta skillet, am I right? In case you don’t have any half and half on hand though, you can use milk instead.

This skillet will certainly serve 2. If you add a side of veges, it’ll stretch to 3. Serve 4 to 6 by simply doubling the recipe.

The crocheted washcloths are my own design from my sister blogs. The orange one is the Taryn Washcloth (free crochet pattern), and the cream one is the Basic C2C Hand Towel (free crochet pattern).

Time Required:

30 Minutes

Skillet Ingredients:

  • 1 lb-ish of Boneless, Skinless Chicken – I used 1.18 lbs of thinly cut breast
  • 1.5 Tsp of Minced Garlic (or 3 Cloves Minced)
  • 1 10.5 oz Can of Condensed Cream of Mushroom Soup
  • 2 Cups of Water + 0.75 Cup of Half & Half [OR 1.75 Cup of Water + 1 Cup of Milk]
  • 2.5 Cups of Rotini Noodles – this is half of a 1 lb box
  • 0.5 Cup of Shredded Cheese + Some for Garnishing – I used Colby Jack
  • Oil for Pan for Cooking

Ingredient Notes:

  • CHEESE: Our favorite cheese is Colby Jack, but Parmesan is a great alternative.
  • MUSHROOM: If you want a little extra mushroom, you can add 1 cup (or 8 ounces), and cook them in with the garlic.

You’ll Also Need:

  • Large Skillet for Browning Meat & Utensil
  • Cutting Board and Knife
  • Measuring Cup & Spoons

Recipe:

Step 1: Cut chicken into strips. If your breasts are not thinly cut, I recommend cutting them in half, and then into strips.

Step 2: Heat oil in large skillet over medium high – I use 6/9. Add chicken, and cook until browned.

Step 3: Add garlic to the skillet, and cook an additional 2-3 minutes.

Step 4: Stir in water, soup and cream (or milk), and heat to boil.

Step 5: Stir in the pasta, and cook as the box recommends – mine said 7 minutes.

Step 6: Stir in the cheese. Continue cooking and stirring 2-3 minutes, or until well combined.

Step 7: Sprinkle with cheese for garnishment, and enjoy!

      I am right there with you! The soup does have some, but it’s a different texture and flavor than added mushrooms – it was enjoyable for me.
