Cheesy Taco Taquitos – Recipe Review – Inside BruCrew Life

This is a recipe review of the delicious and easy to make Cheesy Taco Taquitos from Inside BruCrew Life.

I’ve been getting newsletters lately from Inside BruCrew Life with “Meals Made Simple”, and in one of those was the recipe for these Cheesy Taco Taquitos. They looked delicious, and the recipe seemed pretty easy, plus I like that I had all but the sour cream on hand.

They turned out so good, reheat so well in the microwave, and made enough for several seatings. I definitely recommend trying these taquitos out!

Makes:

13 – 15 Taquitos

Time:

45 Minutes or Less (Cook Meat + 10-15 to Prep + 15 to Bake)

Ingredients I Used:

  • 4 oz of Cream Cheese (this is half a brick)
  • 1/4 Cup of Sour Cream + some for topping
  • 1 lb of Ground Beef
  • 1 Packet of Taco Seasoning
  • 1 14-oz Can of Diced Tomatoes
  • 1.5 Cups of Shredded Cheese
  • 6″ Flour Tortillas
  • Cheesy Taco Taquitos, Recipe from Inside BruCrew Life

I Also Used:

  • Pan to Brown Meat & Spatula
  • Mixing Bowl & Spoons
  • Hand Mixer
  • Aluminum Foil for Pan
  • Sheet Pan

Recipe Notes:

I LOVED this recipe! It was so easy to follow, and many of the ingredients it required, I already had on hand.

I browned my meat, and added in the taco seasoning (as if I were just making tacos), and this is what I used. I didn’t add in any extra taco seasoning, though the recipe indicates to. Though the flavor was delicious, the taco seasoning got a little lost in the recipe of the ingredients. Next time, I will use two taco packets.

I overstuffed some of my taquitos – so easy to do. I ended up with just a few less than the recipe says it yields, and a little bit bigger of a mess, but no big deal.

Being that there is only my husband and I at home, we were able to eat these twice for dinner, and once for lunch. As you can see in my photos, I had some with a side of scrambled eggs for lunch – excellent pairing! When I made them fresh, I served them with a side of mexican rice and refried beans.

Jocelyn includes instructions for making ahead, and freezing, which is such a good idea! I’d like to try this out.

I think the meat mixture itself would also be good as a dip with some tortilla chips.
