I have always been a fan of cold salads – egg, tuna, potato, macaroni… Especially with BBQ food or hamburgers. Mmm! I love how they are so good, and so filling, but not heavy. Sometimes when I get home from work, I just want something light to eat – and egg salad sandwiches are perfect!
This recipe makes enough for 3 – 4 sandwiches making it an easy lunch for the family, but it also can sit in the fridge for up to 5 days making it a great make ahead snack or meal.
What Can I Add to an Egg Salad Sandwich?
I’ve gone with a super simple recipe here for just the basic sandwich, but you could absolutely add lettuce and tomato to your sandwich, or mix in some bacon bits, diced onions or celery, or even dill pickles!
What Else Can You Put Egg Salad On Besides Bread?
Egg salad is great on crackers, wrapped in a tortilla shell, on top of a salad, or just by the spoonful. I’ve also added it to cooked pasta before.
How Many Eggs Do I Need for Egg Salad Sandwiches?
If you’re making egg salad sandwiches for a larger crowd – I think it would make great appetizers at a Summer BBQ, or for meal planning, the general rule is 1.5 – 2 eggs per person, and of course, this depends on how much you like to stuff your sandwich, and also if you add other items to your sandwich.

What Ingredients Do You Need to Make Egg Salad Sandwiches?
- 6 Large Eggs
- 2 – 2.25 Tablespoons of Mayo
- 1 – 1.5 Tablespoon/s of Mustard
- Sprinkle of Garlic Powder – so many great homemade versions on Etsy
- Bread!
What Else Do You Need to Make Egg Salad Sandwiches?
- Small Pot to Boil Eggs In (with Lid)
- Bowl to Chill Eggs In (with Ice)
- Bowl to Mash and Mix Egg Salad
- Masher – there is quite the variety of mashers available; I have this one, and love it for mashing eggs, potatoes and bananas
- Tablespoon
- Mixing Spoon
Super Simple Egg Salad Sandwich Recipe:
Step 1: Boil and peel the eggs.
To Boil: Place eggs in a pot. Fill with hot water to cover eggs. Place on medium heat (I use 6.5) until comes to a rapid boil – about 6 minutes. Pull off heat, and cover for 12 minutes.
Peel: Drain water. Fill a mixing bowl with ice and cold water. Put eggs into cold water to shock. Start peeling.
Step 2: Mash up the eggs.
Step 3: Add mayo and mustard to eggs.
I like 2 tablespoons of mayo, and 1 of mustard, but that’s my preference. Taste, and add more if needed.
Step 4: Sprinkle on garlic powder! I love it.
Spread egg salad onto bread, and enjoy!

Never really thought about it, but it is quite refreshing for Summer. Pretty much Summer all year here in Florida, so I guess that’s why we eat it all the time. Ha!

We love making egg salad here too; the only time consuming part can be peeling the eggs but other than that I do think it’s such a nice, light dinner. I tend to add celery to mine, my son prefers adding relish to his, we’ve definitely added bacon bits to them before too. I like that just some small change ups make for a slightly different taste.

Definitely! I love the added crunch of celery! I do dread peeling the eggs though, so I don’t enjoy it too, too often. I want to buy some of those Egglette things that you crack the egg into first, and then boil – will be a game changer.
